- 1 lb Yellow squash (sliced

- 3 tbsp Olive oil
- 1/2 tsp Italian seasoning
- 1/2 tsp Garlic powder
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the sliced zucchini and yellow squash.
- Drizzle the olive oil over the vegetables and sprinkle with Italian seasoning, garlic powder, sea salt, and black pepper.
- Toss the mixture until the vegetables are evenly coated.
- Spread the zucchini and squash in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
- Remove from the oven and serve immediately.
Notes
