Ingredients

  • 2 medium sweet potatoes
  • peeled and cubed
  • 1 tablespoon olive oil (for roasting)
  • Salt and freshly ground black pepper

  • 5 cups kale leaves
  • stemmed and chopped
  • 1 cup cooked chickpeas (or canned
  • rinsed and drained)
  • 1/3 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons olive oil (for dressing)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender and lightly browned.
  3. While the sweet potatoes are roasting, prepare the kale by chopping it and adding it to a large salad bowl.
  4. Add the cooked chickpeas, dried cranberries, pumpkin seeds, and optional feta cheese to the kale.
  5. In a small bowl, whisk together lemon juice, 2 tablespoons of olive oil, Dijon mustard, honey or maple syrup, and minced garlic to make the dressing.
  6. Once the sweet potatoes are out of the oven, let them cool slightly, then add them to the salad.
  7. Drizzle the dressing over the salad and toss everything together until well combined.
  8. Serve immediately or refrigerate until ready to serve.

Notes

For extra flavor, you can add nuts or seeds of your choice. This salad can be made ahead of time; just store the dressing separately until serving.
