- 2 medium sweet potatoes

- 1/3 cup dried cranberries
- 1/4 cup pumpkin seeds
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons olive oil (for dressing)
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1 small garlic clove

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender and lightly browned.
- While the sweet potatoes are roasting, prepare the kale by chopping it and adding it to a large salad bowl.
- Add the cooked chickpeas, dried cranberries, pumpkin seeds, and optional feta cheese to the kale.
- In a small bowl, whisk together lemon juice, 2 tablespoons of olive oil, Dijon mustard, honey or maple syrup, and minced garlic to make the dressing.
- Once the sweet potatoes are out of the oven, let them cool slightly, then add them to the salad.
- Drizzle the dressing over the salad and toss everything together until well combined.
- Serve immediately or refrigerate until ready to serve.
Notes
For extra flavor, you can add nuts or seeds of your choice. This salad can be made ahead of time; just store the dressing separately until serving.
