- 2 firm pears
- halved and cored
- 4 ounces goat cheese
- 1/3 cup walnuts
- chopped
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Place the pear halves cut side up in a baking dish.
- Drizzle the olive oil over the pears, and season with salt and pepper.
- Bake the pears for about 25-30 minutes or until tender.
- While the pears are baking, prepare the maple walnut drizzle by toasting the chopped walnuts in a skillet over medium heat until fragrant.
- Add maple syrup, lemon juice, and fresh thyme to the skillet, stirring to combine and heat through.
- Once the pears are roasted, remove from the oven and let cool slightly.
- Top each pear half with goat cheese, followed by the warm maple walnut drizzle.
- Serve warm and enjoy!
