Pinch crushed red pepper flakes

1 Tbsp. freshly chopped parsley


Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the halved patty pan squash with olive oil, salt, pepper, minced garlic, thyme, and red pepper flakes.
  • Toss until the squash is evenly coated.
  • Spread the squash in a single layer on a baking sheet.
  • Roast in the oven for about 30 minutes, or until tender and caramelized, stirring halfway through.
  • Remove from the oven and sprinkle with fresh parsley before serving.
