stems trimmed and halved
2 Tbsp. extra-virgin olive oil

2 cloves garlic
minced
1 tsp. chopped fresh thyme leaves
Pinch crushed red pepper flakes
1 Tbsp. freshly chopped parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved patty pan squash with olive oil, salt, pepper, minced garlic, thyme, and crushed red pepper flakes until well coated.
- Spread the squash in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 30 minutes, or until the squash is tender and golden brown, flipping halfway through cooking.
- Remove from the oven and sprinkle with freshly chopped parsley before serving.
