Indulge in a no-bake dessert with layers of creamy filling, salty Ritz crackers, and rich salted caramel in this decadent Ritz Cracker Salted Caramel Icebox Cake.
Ingredients
1 cup granulated sugar
1/4 cup water
1 teaspoon sea salt
3/4 cup heavy cream
3 tablespoons butter
1 teaspoon vanilla extract
2 packages (8 oz each) cream cheese softened
1 cup granulated sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
48 Ritz crackers
1/2 cup salted caramel sauce (plus more for drizzling)
Whipped cream (for garnish)
Instructions
- In a saucepan, combine 1 cup granulated sugar and 1/4 cup water. Cook over medium heat until the sugar dissolves and turns golden brown, about 10 minutes.
- Remove from heat and carefully whisk in 3/4 cup heavy cream, 3 tablespoons butter, 1 teaspoon sea salt, and 1 teaspoon vanilla extract. Let cool.
- In a mixing bowl, beat 2 packages of softened cream cheese and 1 cup granulated sugar until smooth. Add 1/2 cup heavy cream and 1 teaspoon vanilla extract, mixing until fluffy.
- On a serving platter, layer 16 Ritz crackers, half of the cream cheese mixture, and 1/2 cup salted caramel sauce. Repeat layers, finishing with Ritz crackers on top.
- Chill the cake in the refrigerator for at least 4 hours or overnight. Serve chilled, drizzled with additional salted caramel sauce and topped with whipped cream.
Notes
For best results, allow the cake to chill overnight to let the flavors meld together. Adjust the amount of caramel sauce to your preference.
