- 1¼ cups all-purpose or ’00’ flour
- ½ cup cold unsalted butter cubed or ¼ cup olive oil
- ⅓ cup granulated sugar
- 1 whole egg
- 1 egg yolk
- pinch of fine salt
- 1 tsp lemon zest optional
- 1 cup ricotta cheese well-drained
- 2 tbsp granulated sugar adjust to taste
- 1 tsp finely grated lemon zest
- 2 tbsp whipped cream optional
- 3–4 tbsp fig jam
- 5–6 fresh ripe figs sliced into wedges
- 2 tbsp almond slivers optional
- 1 tbsp honey or light glaze for shine
- powdered sugar for dusting optional
Instructions
- In a mixing bowl, combine the flour, sugar, and salt. Add the cubed butter (or olive oil) and mix until crumbly.
- In a separate bowl, whisk together the egg and egg yolk. Add to the flour mixture and combine until a dough forms, adding lemon zest if desired.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a tart pan.
- In a bowl, mix together the ricotta cheese, sugar, and lemon zest. Stir in whipped cream for extra silkiness if using.
- Pour the ricotta filling into the crust, smoothing it evenly.
- Dot the top with fig jam and arrange sliced figs over the filling. Sprinkle with almond slivers if using.
- Bake in the preheated oven for 25-30 minutes or until golden. Brush with honey for shine if desired.
- Cool slightly before dusting with powdered sugar and serving.
Notes
Ensure the ricotta cheese is well-drained to prevent a soggy crust. Adjust sugar in the filling based on the sweetness of the figs.
