Description

This classic Reuben Sandwich is a delightful combination of corned beef, Swiss cheese, sauerkraut, and a zesty Russian dressing, all grilled to perfection between slices of rye bread.


Ingredients

  • 1/2 lb corned beef
  • ½ tsp olive oil
  • 6 slices rye bread
  • 2 Tbsp unsalted butter
  • 1/2 cup sauerkraut
  • 6 slices Swiss cheese
  • 1/4 cup mayonnaise
  • 1 1/2 tsp chili garlic sauce
  • 1/2 tsp lemon juice
  • 1 ½ tsp creamy horseradish
  • 1 garlic clove
  • ½ tsp Worcestershire sauce
  • 1/2 Tbsp onion
  • ⅛ tsp paprika
  • Salt and pepper

Instructions

  1. In a bowl, mix together mayonnaise, chili garlic sauce, lemon juice, horseradish, minced garlic, Worcestershire sauce, grated onion, paprika, salt, and pepper to create the Russian dressing.
  2. Heat olive oil in a skillet over medium heat. Spread butter on one side of each slice of rye bread.
  3. On the unbuttered side of three slices of bread, layer the corned beef, sauerkraut, Swiss cheese, and a spoonful of Russian dressing. Top with the remaining bread slices, buttered side facing up.
  4. Grill the sandwiches in the skillet until golden brown and the cheese has melted, about 4-5 minutes per side.
  5. Remove from heat, slice in half, and serve warm with additional Russian dressing as a dip.

Notes

For an extra crunch, try pressing the sandwich down while grilling. You can also add pickles for an additional flavor twist.
