1 (8 oz) Box of Explore Cuisine Red Lentil Spaghetti
1 Medium Patty Pan Squash (cut into strips)
1 ½ Cups Diced Tomatoes
¼ Cup Fresh Chopped Parsley
1 Tsp Minced Garlic
1 Tsp Onion Powder
½ Tsp Black Pepper
Instructions
- Cook the Red Lentil Spaghetti according to package instructions until al dente.
- Meanwhile, heat a grill pan over medium heat and grill the Patty Pan Squash strips until they are tender and have grill marks.
- In a large skillet, sauté minced garlic, onion powder, and black pepper for 1-2 minutes.
- Add the diced tomatoes to the skillet and simmer for 5-7 minutes.
- Combine the cooked spaghetti with the tomato mixture and gently stir in the grilled squash.
- Top with fresh chopped parsley before serving.
