Ingredients

  • 1 ½ cups (300 g) dry red lentils
  • 1 large (200 g) carrot finely diced
  • 1 small bell pepper
  • 1 large onion chopped
  • 4 cloves of garlic minced
  • 1 heaped tbsp fresh ginger minced
  • ½ tbsp vegetable oil
  • 3 cups (720 ml) vegetable broth or water
  • 1 cup (240 ml) canned coconut milk
  • 1 ½ tsp ground cumin
  • 1 tbsp curry powder
  • ½ tbsp sweetener of choice
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • Sea salt and black pepper to taste
  • ⅓ tsp red pepper flakes (optional)

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, ginger, carrot, and bell pepper, cooking until softened.
  3. Stir in the ground cumin, curry powder, turmeric, paprika, and red pepper flakes (if using), cooking for an additional minute.
  4. Add the rinsed lentils, vegetable broth or water, and canned coconut milk to the pot. Season with sea salt and black pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the lentils are tender.
  6. Taste and adjust seasoning as needed. Serve warm over rice or with bread.

Notes

You can adjust the thickness of the dahl by adding more or less broth. For a spicier version, increase the red pepper flakes.
