- 1 ½ cups (300 g) dry red lentils
- 1 large (200 g) carrot finely diced
- 1 small bell pepper
- 1 large onion chopped
- 4 cloves of garlic minced
- 1 heaped tbsp fresh ginger minced
- ½ tbsp vegetable oil
- 3 cups (720 ml) vegetable broth or water
- 1 cup (240 ml) canned coconut milk
- 1 ½ tsp ground cumin
- 1 tbsp curry powder
- ½ tbsp sweetener of choice
- 1 tsp ground turmeric
- 1 tsp paprika
- Sea salt and black pepper to taste
- ⅓ tsp red pepper flakes (optional)
Instructions
- Rinse the red lentils under cold water until the water runs clear.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, ginger, carrot, and bell pepper, cooking until softened.
- Stir in the ground cumin, curry powder, turmeric, paprika, and red pepper flakes (if using), cooking for an additional minute.
- Add the rinsed lentils, vegetable broth or water, and canned coconut milk to the pot. Season with sea salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the lentils are tender.
- Taste and adjust seasoning as needed. Serve warm over rice or with bread.
Notes
You can adjust the thickness of the dahl by adding more or less broth. For a spicier version, increase the red pepper flakes.
