Ingredients
1 baguette (thinly sliced into 1/2-inch pieces)

2 tbsp olive oil (good quality extra virgin for richness)
handful fresh basil (sliced or chopped)
3 medium peaches (diced into 1/2-inch chunks)
1 pint chopped tomatoes
juice of 1/2 lemon
1 cup ricotta cheese (whole milk ricotta for creamier texture)
balsamic glaze (store-bought or homemade)
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the baguette slices on a baking sheet, brush with melted butter, and season with salt, pepper, and minced garlic.
- Bake in the preheated oven for 10-12 minutes or until golden and crispy.
- In a bowl, combine diced peaches, chopped tomatoes, olive oil, lemon juice, and basil. Mix gently to combine flavors.
- In another bowl, whip the ricotta cheese until smooth.
- To assemble, spread whipped ricotta on each toasted baguette slice, top with the peach and tomato mixture, and drizzle with balsamic glaze.
- Serve immediately and enjoy!
