Ingredients
9 garlic scapes cut into 1-inch pieces
1/3 cup roasted cashews or walnuts
1 cup fresh basil lightly packed
1/3 cup freshly grated parmesan cheese
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt
1/2 cup extra virgin olive oil
Instructions
- Place the garlic scapes, cashews (or walnuts), basil, parmesan cheese, lemon juice, and kosher salt in a food processor.
- Pulse until the mixture is finely chopped.
- With the processor running, gradually add the olive oil and blend until smooth.
- Taste and adjust seasoning if necessary.
- Serve immediately over pasta, bread, or as a dip.
Notes
For stored pesto, keep it in an airtight container in the fridge, and it can last up to a week. You can also freeze the pesto in small portions for longer storage.
