Description

Deliciously spiced pumpkin whoopie pies filled with a creamy maple cream cheese filling, perfect for fall celebrations.


Ingredients

  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 ½ Tablespoons Pumpkin Pie Spice
  • 1 cup granulated sugar
  • 1 cup dark brown sugar firmly packed
  • 1 cup vegetable oil
  • 3 cups canned pumpkin puree chilled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups confectioners’ sugar
  • ½ cup unsalted butter at room temperature
  • 8 oz cream cheese at room temperature
  • 3 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Sprinkles or jimmies for garnish optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, salt, baking soda, baking powder, and pumpkin pie spice.
  3. In a separate large bowl, mix the granulated sugar, brown sugar, vegetable oil, pumpkin puree, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until the cookies are set and a toothpick comes out clean.
  7. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  8. For the filling, beat together the confectioners’ sugar, butter, cream cheese, maple syrup, and vanilla until smooth and creamy.
  9. Once the cookies are cooled, spread a generous amount of filling on the flat side of one cookie and sandwich it with another cookie.
  10. Optionally, decorate the edges with sprinkles or jimmies before serving.

Notes

For the best flavor, use fresh pumpkin puree. These whoopie pies are best enjoyed within a few days of making.
