- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 ½ Tablespoons Pumpkin Pie Spice
- 1 cup granulated sugar
- 1 cup dark brown sugar firmly packed
- 1 cup vegetable oil
- 3 cups canned pumpkin puree chilled
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups confectioners’ sugar
- ½ cup unsalted butter at room temperature
- 8 oz cream cheese at room temperature
- 3 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- Sprinkles or jimmies for garnish optional
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, salt, baking soda, baking powder, and pumpkin pie spice.
- In a separate large bowl, mix the granulated sugar, brown sugar, vegetable oil, pumpkin puree, eggs, and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of batter onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies are set and a toothpick comes out clean.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- For the filling, beat together the confectioners’ sugar, butter, cream cheese, maple syrup, and vanilla until smooth and creamy.
- Once the cookies are cooled, spread a generous amount of filling on the flat side of one cookie and sandwich it with another cookie.
- Optionally, decorate the edges with sprinkles or jimmies before serving.
Notes
For the best flavor, use fresh pumpkin puree. These whoopie pies are best enjoyed within a few days of making.
