- Orzo

- Boneless skinless chicken breast
- Dry white wine

Instructions
- In a large oven-safe skillet, heat some oil over medium heat and sauté the shallot and garlic until softened.
- Add the boneless chicken breast to the skillet and cook until browned on both sides, about 5-7 minutes, then remove and set aside.
- Pour in the dry white wine and chicken stock, scraping the bottom of the skillet to deglaze, and bring to a simmer.
- Stir in the orzo, pumpkin puree, fresh sage, salt, and black pepper. Return the chicken to the skillet, nestling it into the orzo.
- Cover and transfer the skillet to a preheated oven at 375°F and bake for 25-30 minutes, or until the orzo is tender and the chicken is cooked through.
- Remove the sage leaves before serving, then stir in fresh parsley and sprinkle with parmesan cheese before serving.
Notes
For a vegetarian option, omit the chicken and substitute with vegetable broth. Fresh sage adds flavor but is best removed before serving as it can be quite bitter.
