These Pumpkin Spice Banana Nut Muffins are a delightful blend of flavors, combining the sweetness of ripe bananas with the warm spices of pumpkin, making them the perfect fall treat.


Ingredients

  • 8 TBSP unsalted butter
  • room temperature (1 stick)
  • ½ cup light brown sugar (100 grams)
  • ⅓ cup granulated sugar (100 grams)
  • 2 large eggs
  • 2 medium/large spotty extra ripe bananas
  • ½ cup canned pumpkin puree
  • 1 tsp ground cinnamon
  • ½ tsp pumpkin spice
  • 2 cups all-purpose flour (240 grams)
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup chopped walnuts
  • ¼ cup reserved for topping
  • optional cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs, mashed bananas, and pumpkin puree, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, pumpkin spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped walnuts.
  6. Divide the batter evenly among the prepared muffin cups. Sprinkle the reserved chopped walnuts on top and, if desired, sprinkle with cinnamon sugar.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool for a few minutes before transferring to a wire rack.
