These Pumpkin Spice Banana Nut Muffins are a delightful blend of flavors, combining the sweetness of ripe bananas with the warm spices of pumpkin, making them the perfect fall treat.

- 8 TBSP unsalted butter
- room temperature (1 stick)
- ½ cup light brown sugar (100 grams)
- ⅓ cup granulated sugar (100 grams)
- 2 large eggs
- 2 medium/large spotty extra ripe bananas
- ½ cup canned pumpkin puree
- 1 tsp ground cinnamon
- ½ tsp pumpkin spice
- 2 cups all-purpose flour (240 grams)
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup chopped walnuts
- ¼ cup reserved for topping
- optional cinnamon sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, cream together the butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the eggs, mashed bananas, and pumpkin puree, and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, pumpkin spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped walnuts.
- Divide the batter evenly among the prepared muffin cups. Sprinkle the reserved chopped walnuts on top and, if desired, sprinkle with cinnamon sugar.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool for a few minutes before transferring to a wire rack.
Notes
Ensure the bananas are very ripe for optimal sweetness. These muffins freeze well for up to 3 months.
