  • ⅔ cup warm water (110 degrees F/45 degrees C)
  • ¾ cup canned pumpkin
  • ⅓ cup packed brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon salt
  • ¾ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves
  • 3 cups all-purpose flour

  • 1 tablespoon cornmeal
  • 6 cups water
  • or more as needed
  • 1 teaspoon white sugar
  • cooking spray

Instructions

  1. In a small bowl, dissolve yeast in warm water; let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine pumpkin, brown sugar, cinnamon, salt, nutmeg, allspice, and cloves.
  3. Add the dissolved yeast to the pumpkin mixture and stir well.
  4. Gradually add flour, mixing until a dough forms. Knead on a floured surface until smooth, about 8-10 minutes.
  5. Place dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  6. Preheat the oven to 425 degrees F (220 degrees C) and line a baking sheet with cornmeal.
  7. Punch down the dough, divide it into 8 pieces, and shape each piece into a bagel by forming a ring.
  8. In a large pot, bring 6 cups of water to a boil; add 1 teaspoon white sugar.
  9. Boil bagels for 1 minute on each side, then remove and place on the prepared baking sheet.
  10. Spray bagels lightly with cooking spray and bake for 20-25 minutes or until golden brown.
  11. Let cool on a wire rack before serving.

Notes

For extra flavor, feel free to add chocolate chips or nuts to the dough. Store bagels in an airtight container for up to a week.
