These Pumpkin Protein Muffins are the perfect, nutritious snack or breakfast option. Packed with protein and the warm flavors of fall, they are moist, delicious, and easy to make.
Ingredients
1 cup pumpkin puree
¾ cup full-fat plain Greek yogurt
2/3 cup maple syrup
2 large eggs
2 tablespoons avocado oil
1 ¾ cups oat flour
½ cup vanilla whey protein powder
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with non-stick spray.
- In a large bowl, mix together the pumpkin puree, Greek yogurt, maple syrup, eggs, and avocado oil until well combined.
- In another bowl, whisk together the oat flour, whey protein powder, pumpkin pie spice, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
These muffins can be stored in an airtight container for up to a week. You can also freeze them for longer storage. If you prefer a sweeter muffin, consider adding chocolate chips or nuts.
