- 2 ¼ cups all purpose flour
- 2 ½ teaspoon ground cinnamon
- 1 ½ teaspoon baking powder
- ¾ teaspoon baking soda
- ¾ teaspoon salt
- ½ teaspoon nutmeg
- ¼ teaspoon cloves
- 1 cup packed brown sugar
- ½ cup vegetable oil
- ⅓ cup granulated sugar
- 2 large eggs + 1 yolk
- 3 tablespoons sour cream
- or plain yogurt
- 1 (15 oz) can pumpkin puree
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves.
- In another bowl, combine the brown sugar, vegetable oil, and granulated sugar, mixing until smooth.
- Add the eggs and yolk one at a time, followed by the sour cream and pumpkin puree, mixing until well incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
These muffins are best served warm or at room temperature. You can also add nuts or chocolate chips for extra flavor!
