Ingredients

- 2 ⅔ cups (300 g / 11 oz) pumpkin cubed
- ⅔ cups (100 g / 4 oz) starchy potato cubed
- ½ tsp salt
- ¾ cup (95 g) flour
- 2 tbsp (25 g) vegan butter
- 2 tsp sage densely packed
Instructions
- Boil pumpkin and potato cubes until tender, then drain and mash them together.
- Mix in salt and gradually add flour until a soft dough forms.
- Divide dough into sections, roll into long ropes, and cut into bite-sized pieces to form gnocchi.
- Cook gnocchi in boiling salted water until they float, then remove and set aside.
- In a pan, melt vegan butter and add sage, cooking until fragrant, then toss the cooked gnocchi in the pan to coat.
Notes
For a richer flavor, consider adding a sprinkle of nutritional yeast or a dash of lemon juice to the butter and sage mixture.
