- 1 1/2 cups milk
- 1 cup pure pumpkin
- 5 large eggs

- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 2 tablespoons white sugar
- 1 teaspoon pumpkin pie spice
- 1/3 cup chopped pecans
- 1/3 cup unsalted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cut the stale bread into cubes and place them in the greased dish.
- In a large bowl, whisk together the milk, pumpkin, eggs, white sugar, pumpkin pie spice, and vanilla extract until smooth.
- Pour the mixture evenly over the bread cubes, ensuring all the bread is coated.
- In another bowl, combine the all-purpose flour, brown sugar, white sugar, pumpkin pie spice, and chopped pecans. Stir in the melted butter until crumbly.
- Sprinkle the streusel topping evenly over the casserole.
- Bake for 30-35 minutes or until the top is golden and the casserole is set.
