This Pumpkin French Toast Casserole is a perfect blend of creamy pumpkin, rich spices, and hearty bread, making it an ideal dish for fall brunches or cozy breakfasts.


Ingredients

  • 1 15-18 oz loaf of stale white bread
  • 1 1/2 cups milk
  • 1 cup pure pumpkin
  • 5 large eggs
  • 1/4 cup white sugar
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 2 tablespoons white sugar
  • 1 teaspoon pumpkin pie spice
  • 1/3 cup chopped pecans
  • 1/3 cup unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cube the stale bread and place it in the prepared dish.
  3. In a large bowl, whisk together the milk, pumpkin, eggs, white sugar, pumpkin pie spice, and vanilla extract.
  4. Pour the pumpkin mixture over the cubed bread, making sure all pieces are well-coated.
  5. In a separate bowl, combine the streusel topping ingredients – flour, brown sugar, white sugar, pumpkin pie spice, chopped pecans, and melted butter – until crumbly.
  6. Sprinkle the streusel topping evenly over the bread mixture.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
  8. Allow to cool slightly before serving warm.

Notes

For best results, use stale bread so it can absorb the pumpkin mixture well. This dish can be prepared the night before and baked in the morning.
