Indulge in the flavors of fall with this delicious Pumpkin French Toast recipe, perfect for a cozy breakfast or brunch.

Ingredients

Scale
  • 4 eggs
  • 2/3 cup milk
  • 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 12 slices Texas toast
  • 1/2 cup salted or unsalted butter
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. In a large bowl, whisk together the eggs, milk, pumpkin puree, vanilla extract, ground cinnamon, and pumpkin pie spice until smooth.
  2. Soak the Texas toast slices in the pumpkin mixture for a few minutes on each side, allowing them to absorb the flavors.
  3. Preheat a griddle or skillet over medium heat and grease lightly.
  4. Cook the soaked bread slices for 3-4 minutes on each side or until golden brown and cooked through.
  5. Meanwhile, in a separate bowl, mix together the butter, pumpkin puree, maple syrup, vanilla extract, cinnamon, and pumpkin pie spice to create whipped pumpkin butter.
  6. Serve the French toast warm with a dollop of whipped pumpkin butter on top.

Notes

For a sweeter flavor, consider adding a sprinkle of powdered sugar on top before serving.
