Description

Deliciously spiced Pumpkin Cream Cheese Muffins, perfect for fall and a delightful treat any time of year.


Ingredients

  • 15 ounce can pumpkin puree
  • 2 large eggs
  • 1 1/2 cups light brown sugar
  • 1/2 cup oil
  • 3/4 cup sour cream
  • 1 tbsp vanilla extract
  • 1 tbsp pumpkin pie spice
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 8 ounces cream cheese
  • softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with muffin liners.
  2. In a large bowl, mix together the pumpkin puree, eggs, light brown sugar, oil, sour cream, and vanilla extract until well combined.
  3. In another bowl, whisk together the pumpkin pie spice, all-purpose flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. In a small bowl, prepare the cream cheese filling by mixing together the softened cream cheese, granulated sugar, egg, and vanilla until smooth.
  6. Scoop a portion of the muffin batter into each muffin cup, then add a spoonful of the cream cheese filling on top. Cover with more muffin batter.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, you can add nuts or chocolate chips to the muffin batter.
