Description

These Pumpkin Cream Cheese Muffins are a delightful blend of moist pumpkin muffins filled with a rich cream cheese mixture, perfect for fall or any time you crave a sweet treat.


Ingredients

  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2 tsp Ground cinnamon
  • 1 tsp Pumpkin pie spice
  • 1/4 tsp Ground nutmeg
  • 15 oz Pumpkin puree
  • 1/2 cup Unsalted butter

  • 3/4 cup Brown sugar
  • packed light or dark
  • 1 Large egg
  • room temperature
  • 1 tsp Pure vanilla extract
  • 1/4 cup Sour cream
  • room temperature
  • 1/2 cup Buttermilk
  • room temperature
  • Coarse sugar
  • like sugar in the raw
  • 4 oz Cream cheese
  • room temperature
  • 2 TBSP White granulated sugar
  • 1 tsp All-purpose flour
  • 1 tsp Milk
  • 1 tsp Pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice, and nutmeg.
  3. In another bowl, mix the pumpkin puree, melted butter, brown sugar, egg, vanilla extract, sour cream, and buttermilk until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a small bowl, prepare the cream cheese filling by mixing the cream cheese, granulated sugar, flour, milk, and vanilla extract until smooth.
  6. Scoop a tablespoon of the muffin batter into each muffin cup, followed by a tablespoon of the cream cheese mixture, then top with more muffin batter to cover.
  7. Sprinkle coarse sugar on top of each muffin before placing them in the oven.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure all ingredients are at room temperature for better mixing. These muffins freeze well, so make a batch ahead of time!
