  • 2 large eggs
  • ½ cup vegetable oil
  • or melted and cooled butter
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese
  • room temperature
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, and salt.
  3. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  5. For the cream cheese swirl, beat the cream cheese, granulated sugar, egg yolk, and vanilla extract together until creamy.
  6. Fill each muffin liner halfway with the pumpkin batter, add a dollop of cream cheese mixture, then top with more pumpkin batter until the liners are about two-thirds full.
  7. Use a toothpick or knife to swirl the cream cheese mixture into the pumpkin batter.
  8. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra sweetness, you can sprinkle cinnamon sugar on top before baking. Ensure the cream cheese is at room temperature for easy mixing.
