Description

Ingredients

  • 1 cup pumpkin puree
  • not pumpkin pie filling
  • 1 large egg
  • 3/4 cup light brown sugar
  • 1/4 cup oil
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon pumpkin pie spice
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 4 ounces cream cheese
  • softened
  • 1/4 cup granulated sugar
  • 3 tablespoons all purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the pumpkin puree, 1 egg, brown sugar, oil, sour cream, and vanilla extract until smooth.
  3. In another bowl, whisk together the pumpkin pie spice, flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. In a separate bowl, beat together the cream cheese, the remaining egg, granulated sugar, and flour until smooth.
  6. Pour half of the pumpkin batter into the prepared loaf pan, then spread the cream cheese filling over it, and top with the remaining pumpkin batter.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Make sure to use pure pumpkin puree for the best flavor. This bread can be stored in an airtight container for several days.
