- 1 cup pumpkin puree

- 1 large egg
- 3/4 cup light brown sugar
- 1/4 cup oil
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 tablespoon pumpkin pie spice
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 4 ounces cream cheese
- softened
- 1/4 cup granulated sugar
- 3 tablespoons all purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the pumpkin puree, 1 egg, brown sugar, oil, sour cream, and vanilla extract until smooth.
- In another bowl, whisk together the pumpkin pie spice, flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- In a separate bowl, beat together the cream cheese, the remaining egg, granulated sugar, and flour until smooth.
- Pour half of the pumpkin batter into the prepared loaf pan, then spread the cream cheese filling over it, and top with the remaining pumpkin batter.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Make sure to use pure pumpkin puree for the best flavor. This bread can be stored in an airtight container for several days.
