Instructions
- In a large mixing bowl, whisk together the eggs, cottage cheese, pumpkin puree, maple syrup, and vanilla extract until well combined.
- In another bowl, mix the flour, baking powder, and cinnamon together.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, fold in any mix-ins like chocolate chips.
- Heat a non-stick skillet over medium heat and pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with additional maple syrup drizzled on top.
