- 1 ¼ cups pumpkin puree
- 1 egg

- 8 oz cream cheese softened
- 2 cups powdered sugar
- 3 tablespoon butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Set aside.
- In another bowl, cream the softened butter, granulated sugar, and brown sugar until fluffy.
- Add in the pumpkin puree, egg, and vanilla extract; mix until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 15-18 minutes, or until edges are lightly golden. Let cool on the sheet for a few minutes before transferring to wire racks.
- For the cream cheese frosting, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.
- Once the cookies are completely cool, spread the frosting generously on top of each cookie.
Notes
Ensure the butter and cream cheese are at room temperature for a smoother frosting. Feel free to add nuts or chocolate chips for extra flavor.
