- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg

- 1/2 tsp salt
- 1/2 cup (100g) granulated sugar
- 1/2 cup (110g) packed light-brown sugar
- 1/2 cup (120ml) vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (240g) canned pumpkin puree
- 1 1/2 cups (255g) semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
- In a large bowl, mix the granulated sugar, light-brown sugar, and vegetable oil until combined.
- Add the egg and vanilla extract to the sugar mixture, whisking until smooth. Then stir in the pumpkin puree.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the semi-sweet chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-18 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, consider adding chopped nuts or a sprinkle of sea salt on top of the cookies before baking.
