Delight in the flavors of fall with this decadent Pumpkin Chip Banana Bread, a perfect blend of ripe bananas and pumpkin, enhanced with rich chocolate chips.

- 3 very ripe bananas
- mashed
- approx. 1 1/2 cup
- 1 large egg
- room temp is best
- 2/3 c pumpkin
- 1 1/2 c flour
- 5 T butter
- melted and then cooled
- 1/3 c brown sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1 c chocolate chips (I used dark chocolate)
- ½ – 1 tsp pumpkin pie spice
- optional
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas with the melted butter until well combined.
- Add the egg, pumpkin, brown sugar, and vanilla extract, mixing until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, sea salt, and pumpkin pie spice if using.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack.
Notes
For an extra flavor kick, add nuts or swap dark chocolate for milk chocolate chips.
