Description

This hearty Pumpkin Chili combines the flavors of turkey and chicken sausage with the warmth of pumpkin and spices, creating a unique and comforting dish perfect for chilly nights.


Ingredients

  • 1.3 lbs ground turkey
  • extra lean
  • 6 small links
  • 9oz chicken maple sausage
  • 1 sweet onion
  • chopped
  • 3 cloves of garlic
  • minced
  • 1 yellow bell pepper
  • diced
  • 1 orange bell pepper
  • diced
  • 1 15.5 oz can cannellini beans
  • drained and rinsed
  • 1 15.5 oz can red kidney beans
  • 1 29 oz can pumpkin purée
  • 1 28 oz can diced tomatoes
  • 1 12 fl. Oz. bottle pumpkin beer
  • 1/2 cup chicken broth
  • 2 tbsp chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 2 tsp brown sugar
  • 1/2 tsp cayenne pepper
  • optional
  • 4 Tbsp olive oil
  • Sea Salt and pepper to taste
  • Sour cream
  • Grated cheddar cheese
  • Green onions
  • sliced

Instructions

  1. In a large pot, heat the olive oil over medium heat and add the chopped sweet onion and minced garlic. Sauté until the onion is translucent.
  2. Add the ground turkey and chicken maple sausage, breaking it apart with a spoon, and cook until browned.
  3. Stir in the diced yellow and orange bell peppers and cook for another 5 minutes.
  4. Add the cannellini beans, red kidney beans, pumpkin purée, diced tomatoes, pumpkin beer, and chicken broth to the pot.
  5. Season with chili powder, oregano, cumin, brown sugar, cayenne pepper (if using), sea salt, and pepper to taste. Stir well to combine.
  6. Bring the chili to a boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.
  7. Serve hot, garnished with sour cream, grated cheddar cheese, and sliced green onions.

Notes

Feel free to adjust the spices according to your heat preference. This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
