- 1¾ cups graham cracker crumbs
- ½ cup unsalted butter
- 15 ounces pumpkin puree
- 24 ounces cream cheese
- 1 cup granulated sugar
- ½ cup brown sugar
- 3 large eggs
- 2 teaspoons pure vanilla extract
- 1 tablespoon pumpkin pie spice
- ½ teaspoon kosher salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine the graham cracker crumbs and melted butter until crumbly. Press the mixture into the bottom of the prepared springform pan.
- In a large bowl, beat the cream cheese until smooth, then gradually add both sugars and mix until combined.
- Add the pumpkin puree, vanilla extract, pumpkin pie spice, and salt to the cream cheese mixture and mix well.
- Beat in eggs one at a time, mixing until just combined after each addition.
- Pour the pumpkin cheesecake filling over the crust in the springform pan.
- Bake in preheated oven for 30 minutes or until set. Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
For an extra touch, serve with whipped cream and a sprinkle of cinnamon on top. Be sure to use pure pumpkin puree and not pumpkin pie filling for the best flavor.
