Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a mixing bowl, combine graham cracker crumbs, 6 tablespoons sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
- In another bowl, whisk together the pumpkin puree, heavy cream, 2 eggs, 3/4 cup sugar, vanilla extract, and pumpkin pie spice until smooth.
- Pour the pumpkin mixture over the crust and spread it evenly.
- In a separate bowl, beat the softened cream cheese until smooth. Add 1 egg, egg yolk, 1/2 cup sugar, and 1 teaspoon vanilla extract, then mix until fully combined.
- Drop spoonfuls of the cream cheese mixture over the pumpkin layer and gently swirl with a knife to create a marbled effect.
- Bake for 30-35 minutes, or until the center is set. Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
Notes
For best results, let the bars chill overnight to enhance the flavors. You can serve with whipped cream on top if desired.
