  • 2 teaspoons pumpkin pie spice
  • 8 oz cream cheese
  • 1 large egg
  • 1 egg yolk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, 6 tablespoons sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
  3. In another bowl, whisk together the pumpkin puree, heavy cream, 2 eggs, 3/4 cup sugar, vanilla extract, and pumpkin pie spice until smooth.
  4. Pour the pumpkin mixture over the crust and spread it evenly.
  5. In a separate bowl, beat the softened cream cheese until smooth. Add 1 egg, egg yolk, 1/2 cup sugar, and 1 teaspoon vanilla extract, then mix until fully combined.
  6. Drop spoonfuls of the cream cheese mixture over the pumpkin layer and gently swirl with a knife to create a marbled effect.
  7. Bake for 30-35 minutes, or until the center is set. Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
