Ingredients

  • 300 grams Biscoff cookie crumbs
  • 1/4 cup brown sugar
  • 8 tbsp unsalted butter melted
  • 907 grams cream cheese softened
  • 1 cup granulated sugar
  • 2/3 cup brown sugar
  • 2/3 cup sour cream
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups pumpkin puree
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon powder
  • 1/4 tsp nutmeg
  • 1 cup whipping cream
  • 1/2 cup Biscoff cookie butter
  • 1/2 cup Biscoff cookies crumbs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine Biscoff cookie crumbs, brown sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In another bowl, beat cream cheese until smooth, then add granulated sugar, brown sugar, and sour cream, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla, pumpkin puree, pumpkin pie spice, cinnamon, and nutmeg until well combined.
  5. Pour the pumpkin cheesecake mixture over the crust in the baking pan and spread evenly.
  6. Bake for 30 minutes or until the center is set. Remove from the oven and let cool completely.
  7. Once cooled, whip the cream until stiff peaks form and spread over the cheesecake.
  8. Drizzle Biscoff cookie butter over the whipped cream and sprinkle with Biscoff cookie crumbs before slicing into bars.
