- ⅔ cup (168 g) canned pumpkin
- 1 ½ teaspoons pumpkin spice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, combine graham cracker crumbs, granulated sugar, brown sugar, and melted butter. Mix well and press the mixture firmly into the bottom of the prepared pan to form the crust.
- In a large mixing bowl, beat the cream cheese, granulated sugar, and light brown sugar until smooth and creamy.
- Add sour cream and vanilla extract, mixing until fully incorporated.
- Add the lightly beaten eggs, one at a time, ensuring each is fully mixed before adding the next.
- In a separate bowl, combine canned pumpkin and pumpkin spice. Gently fold this mixture into the cream cheese mixture until just blended.
- Pour the pumpkin cheesecake filling over the graham cracker crust, smoothing the top with a spatula.
- Bake in the preheated oven for 30 minutes or until the edges are set and the center has a slight jiggle.
- Allow to cool at room temperature before refrigerating for at least 2 hours. Cut into bars and serve.
