  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) light brown sugar
  • firmly packed
  • ½ cup (113 g) sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • lightly beaten
  • ⅔ cup (168 g) canned pumpkin
  • 1 ½ teaspoons pumpkin spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, brown sugar, and melted butter. Mix well and press the mixture firmly into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, granulated sugar, and light brown sugar until smooth and creamy.
  4. Add sour cream and vanilla extract, mixing until fully incorporated.
  5. Add the lightly beaten eggs, one at a time, ensuring each is fully mixed before adding the next.
  6. In a separate bowl, combine canned pumpkin and pumpkin spice. Gently fold this mixture into the cream cheese mixture until just blended.
  7. Pour the pumpkin cheesecake filling over the graham cracker crust, smoothing the top with a spatula.
  8. Bake in the preheated oven for 30 minutes or until the edges are set and the center has a slight jiggle.
  9. Allow to cool at room temperature before refrigerating for at least 2 hours. Cut into bars and serve.
