- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter melted
- 2 (8 oz) blocks cream cheese softened
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/3 cup flour
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
- 4 tablespoons cold unsalted butter cubed
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until crumbly. Press firmly into the bottom of the prepared baking dish.
- In a separate bowl, beat cream cheese, pumpkin puree, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined.
- Pour the cream cheese mixture over the crust in the baking dish.
- To prepare the streusel topping, combine rolled oats, flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly, then sprinkle over the cheesecake filling.
- Bake for 30-35 minutes or until the center is set and the top is lightly golden. Allow to cool before slicing into bars.
Notes
For best results, refrigerate the bars for a few hours before serving to allow the flavors to meld.
