- 2–3 cups powdered sugar
- 1–2 tablespoons whipping cream
- 1 cup white sugar
- 1/3 cup unsalted butter
- 1/2 cup whipping cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon coarse salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
- In another bowl, beat the vegetable oil, brown sugar, and white sugar until well combined. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract and pumpkin puree.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the caramel sauce by combining white sugar and butter in a saucepan over medium heat. Stir until the sugar is dissolved. Carefully add the whipping cream, vanilla extract, and salt, and stir until smooth. Allow to cool.
- For the frosting, beat the softened butter and cream cheese together until smooth. Mix in the salted caramel, then gradually add the powdered sugar until the desired consistency is reached. Add whipping cream if needed to thin.
- Once the cake has completely cooled, frost with the caramel cream cheese frosting. Drizzle with additional caramel sauce if desired. Slice and serve!
Notes
For a richer flavor, let the frosting sit in the refrigerator for about 30 minutes before spreading it on the cake. You can also use store-bought salted caramel for convenience.
