- 1 cup canned pumpkin puree
- 1 cup milk of choice
- 2 large eggs
- 2 teaspoons vanilla
- ⅓ cup maple syrup or honey

Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with avocado oil or neutral oil.
- In a large bowl, combine the rolled oats, pumpkin spice, baking powder, and salt.
- In another bowl, whisk together the pumpkin puree, milk, eggs, vanilla, and maple syrup or honey until smooth.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- If desired, fold in chocolate chips, nuts, raisins, or your preferred toppings.
- Pour the mixture into the greased baking dish and spread it evenly.
- Bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing and serving.
Notes
For a vegan version, replace the eggs with flax eggs. Adjust baking time as needed for different oven types.
