Ingredients

  • 2 cups rolled oats
  • 1 cup milk of choice
  • 2 large eggs
  • 2 Tbsp butter
  • melted
  • 1 cup pumpkin purée
  • ⅓ cup pure maple syrup or honey
  • ⅓ cup chopped pecans or pecan pieces
  • 1 ½ tsp vanilla extract
  • 1½ tsp pumpkin spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine rolled oats, baking powder, pumpkin spice, cinnamon, and sea salt.
  3. In another bowl, whisk together milk, eggs, melted butter, pumpkin purée, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined. Stir in chopped pecans.
  5. Transfer the mixture to the prepared baking dish and spread it evenly.
  6. Bake for 30-35 minutes, or until the top is lightly golden and set.
  7. Let it cool slightly before slicing and serving.

Notes

For added sweetness, top with extra maple syrup or honey before serving. This dish can be stored in the fridge for up to 4 days.
