- avocado oil or neutral oil for greasing
- 2 cups rolled oats
- 2 teaspoons pumpkin spice
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup canned pumpkin puree
- 1 cup milk of choice
- 2 large eggs
- 2 teaspoons vanilla
- ⅓ cup maple syrup or honey
- chocolate chips nuts raisins or topping of choice
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with avocado oil or neutral oil.
- In a large bowl, combine rolled oats, pumpkin spice, baking powder, and salt.
- In another bowl, mix together pumpkin puree, milk, eggs, vanilla, and maple syrup or honey until well combined.
- Pour the wet mixture into the dry ingredients and stir until just combined. If desired, fold in chocolate chips, nuts, or raisins.
- Transfer the oatmeal mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until the top is golden and a toothpick inserted comes out clean.
- Allow to cool slightly before slicing and serving warm.
Notes
For an egg-free version, substitute the two eggs with flax eggs: mix 2 tablespoons of ground flaxseed with 6 tablespoons of water and let sit until thickened.
