  • 1 medium yellow onion diced
  • 2 medium carrots peeled and diced
  • 2 celery stalks diced
  • 6 cloves garlic minced
  • 1 tablespoon fresh thyme leaves or ½ teaspoon dried thyme
  • ¼ cup all-purpose flour
  • 2 ½ cups low sodium chicken broth
  • ½ cup whole milk or heavy cream
  • 3 cups shredded rotisserie chicken skin removed
  • 1 ¼ cups frozen peas do not thaw
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry thawed
  • 1 large egg beaten + 1 tablespoon water (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  3. Stir in the minced garlic and thyme, cooking for another minute until fragrant.
  4. Sprinkle the flour over the mixture, stirring continuously for 1-2 minutes to cook the flour.
  5. Gradually add the chicken broth and milk (or cream), stirring until the mixture is smooth and starts to thicken.
  6. Add the shredded chicken and frozen peas, and season with salt and pepper. Mix well and remove from heat.
  7. Transfer the chicken mixture to a baking dish. Roll out the puff pastry and place it over the filling, trimming any excess. Cut slits in the pastry to allow steam to escape.
  8. Mix the beaten egg and water to create an egg wash, and brush it over the puff pastry for a golden finish.
  9. Bake for 25-30 minutes or until the pastry is golden brown and puffed.
  10. Let cool for a few minutes before serving. Garnish with thyme and parsley.

Notes

For a richer flavor, consider adding a splash of white wine before adding the chicken broth. Serve with a simple side salad for a complete meal.
