- 1 medium yellow onion diced
- 2 medium carrots peeled and diced
- 2 celery stalks diced
- 6 cloves garlic minced
- 1 tablespoon fresh thyme leaves or ½ teaspoon dried thyme
- ¼ cup all-purpose flour
- 2 ½ cups low sodium chicken broth
- ½ cup whole milk or heavy cream
- 3 cups shredded rotisserie chicken skin removed
- 1 ¼ cups frozen peas do not thaw
- Salt and pepper to taste
- 1 sheet frozen puff pastry thawed
- 1 large egg beaten + 1 tablespoon water (for egg wash)

Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Stir in the minced garlic and thyme, cooking for another minute until fragrant.
- Sprinkle the flour over the mixture, stirring continuously for 1-2 minutes to cook the flour.
- Gradually add the chicken broth and milk (or cream), stirring until the mixture is smooth and starts to thicken.
- Add the shredded chicken and frozen peas, and season with salt and pepper. Mix well and remove from heat.
- Transfer the chicken mixture to a baking dish. Roll out the puff pastry and place it over the filling, trimming any excess. Cut slits in the pastry to allow steam to escape.
- Mix the beaten egg and water to create an egg wash, and brush it over the puff pastry for a golden finish.
- Bake for 25-30 minutes or until the pastry is golden brown and puffed.
- Let cool for a few minutes before serving. Garnish with thyme and parsley.
Notes
For a richer flavor, consider adding a splash of white wine before adding the chicken broth. Serve with a simple side salad for a complete meal.
