Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 large leeks
  • 2 garlic cloves minced
  • 4 cups vegetable broth
  • 2 pounds Yukon Gold potatoes peeled and diced into ½-inch pieces
  • 1 teaspoon kosher salt
  • 1 bay leaf
  • 2 sprigs of fresh thyme
  • freshly chopped chives and black pepper for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the leeks and garlic, sautéing until soft, about 5 minutes.
  2. Stir in the vegetable broth, potatoes, salt, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer till the potatoes are tender, about 25 minutes.
  3. Remove the bay leaf and thyme sprigs. Blend the soup until smooth using an immersion blender or in batches with a regular blender.
  4. If desired, add more vegetable broth to achieve your desired consistency. Season to taste with additional salt and pepper.
  5. Serve hot, garnished with chopped chives and a sprinkle of black pepper.

Notes

For a creamier texture, you can add a splash of heavy cream or a dollop of sour cream before serving.
