- 2 tablespoons extra-virgin olive oil
- 3 large leeks
- 2 garlic cloves minced
- 4 cups vegetable broth
- 2 pounds Yukon Gold potatoes peeled and diced into ½-inch pieces
- 1 teaspoon kosher salt
- 1 bay leaf
- 2 sprigs of fresh thyme
- freshly chopped chives and black pepper for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the leeks and garlic, sautéing until soft, about 5 minutes.
- Stir in the vegetable broth, potatoes, salt, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer till the potatoes are tender, about 25 minutes.
- Remove the bay leaf and thyme sprigs. Blend the soup until smooth using an immersion blender or in batches with a regular blender.
- If desired, add more vegetable broth to achieve your desired consistency. Season to taste with additional salt and pepper.
- Serve hot, garnished with chopped chives and a sprinkle of black pepper.
Notes
For a creamier texture, you can add a splash of heavy cream or a dollop of sour cream before serving.
