Description

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 3 large leeks
  • 2 garlic cloves minced
  • 4 cups vegetable broth
  • 2 pounds Yukon Gold potatoes peeled and diced into ½-inch pieces
  • 1 teaspoon kosher salt
  • 1 bay leaf
  • 2 sprigs of fresh thyme
  • freshly chopped chives and black pepper for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add sliced leeks and garlic, sauté until soft, about 5 minutes.
  2. Add the vegetable broth, potatoes, salt, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Remove bay leaf and thyme sprigs. Blend the soup until smooth using an immersion blender or by transferring in batches to a blender.
  4. Adjust consistency with additional broth if desired. Season with salt and pepper to taste. Serve garnished with chopped chives.

Notes

For a thicker soup, blend less. For added richness, consider stirring in a splash of cream just before serving.
