Ingredients
1 cup unsalted butter softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract optional
2 cups all-purpose flour or gluten-free blend
1 teaspoon baking soda
1/2 teaspoon salt
1 can canned pineapple rings well-drained
2 tablespoons additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Press a pineapple ring into the center of each cookie and sprinkle with additional sugar.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Make sure to drain the pineapple well to avoid excess moisture in the cookies. You can also substitute fresh pineapple for a more vibrant flavor.
