Description
This Pickle-Brined Chicken is juicy, flavorful, and incredibly tender thanks to the tangy brine. Perfect for a family dinner or meal prep!
Ingredients
4 (6 ounces each) boneless skinless chicken breasts
1–1/2 cups dill pickle juice
1–1/2 cups all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch cayenne pepper

1 tablespoon olive oil
1 tablespoon unsalted butter
Instructions
- In a large bowl, combine the chicken breasts and dill pickle juice. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, pepper, and cayenne pepper (if using).
- Remove the chicken from the brine and pat it dry with paper towels.
- Dredge each chicken breast in the flour mixture, coating well on all sides.
- In a large oven-safe skillet, heat the olive oil and butter over medium heat. Once hot, add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (75 degrees Celsius).
- Let the chicken rest for 5 minutes before serving.
Notes
Feel free to serve with your favorite side dishes, like mashed potatoes or a fresh salad. The leftover pickle juice can be used as a brine for other meats or veggies!
