- 1 ½ lbs chicken breasts cut into 1½ inch cubes
- 1 red bell pepper cut into strips
- 1 orange or yellow bell pepper cut into strips
- ½ large red onion cut into strips
- 1 cup diced pineapple
- ⅓ cup low-sodium soy sauce
- ¼ cup brown sugar packed
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons pineapple juice
- 1 Tablespoon cornstarch
- 1 Tablespoon olive oil
- 1 teaspoon fresh ginger
- 1 teaspoon minced garlic
- ¼ teaspoon crushed red pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken, red bell pepper, orange or yellow bell pepper, red onion, and pineapple.
- In a separate bowl, whisk together the soy sauce, brown sugar, Worcestershire sauce, pineapple juice, cornstarch, olive oil, ginger, garlic, and crushed red pepper.
- Pour the sauce over the chicken and vegetables, tossing until everything is well coated.
- Spread the mixture evenly on a sheet pan.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
