- ½ cup light brown sugar

- 2 large eggs
- 1 can (15 oz) pure pumpkin
- ½ cup canola or vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, baking soda, salt, cloves, and nutmeg.
- In another bowl, combine the eggs, pumpkin, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
