Description

These Perfect Pumpkin Muffins are moist, flavorful, and spiced just right—a delightful treat for fall or any time of year.


Ingredients

  • 1¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • 1 can (15 oz) pure pumpkin
  • ½ cup canola or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, baking soda, salt, cloves, and nutmeg.
  3. In another bowl, combine the eggs, pumpkin, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
