  • 2 lbs zucchini about 34 medium
  • ends trimmed
  • sliced into 1/2-inch thick rounds or half-moons
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 0.5 cup Parmesan cheese grated
  • divided
  • 2 tbsp fresh parsley chopped
  • for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced zucchini with olive oil, garlic powder, salt, and black pepper until evenly coated.
  3. Spread the seasoned zucchini on a baking sheet in a single layer.
  4. Sprinkle half of the Parmesan cheese over the zucchini.
  5. Bake for 25-30 minutes, or until the zucchini is tender and lightly browned.
  6. Remove from the oven, sprinkle with the remaining Parmesan cheese, and garnish with chopped parsley if desired.
