- ends trimmed
- sliced into 1/2-inch thick rounds or half-moons
- 2 tbsp olive oil
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper freshly ground
- 0.5 cup Parmesan cheese grated
- divided
- 2 tbsp fresh parsley chopped
- for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced zucchini with olive oil, garlic powder, salt, and black pepper until evenly coated.
- Spread the seasoned zucchini on a baking sheet in a single layer.
- Sprinkle half of the Parmesan cheese over the zucchini.
- Bake for 25-30 minutes, or until the zucchini is tender and lightly browned.
- Remove from the oven, sprinkle with the remaining Parmesan cheese, and garnish with chopped parsley if desired.
