- 1½ pounds cod fish fillets
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp smoked paprika

- ½ tsp black pepper
- 2 large eggs
- 2 tbsp milk
- ½ cup mayonnaise
- 2 tbsp chopped dill pickles or sweet relish
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp chopped fresh dill or parsley
- ½ tsp garlic powder
- salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix the panko breadcrumbs, flour, garlic powder, smoked paprika, salt, and black pepper to create the crispy coating mix.
- In another bowl, whisk together the eggs and milk until combined.
- Dip each cod fillet into the egg mixture, allowing excess to drip off, then coat evenly with the crispy coating mix. Place on the baking sheet.
- Bake the cod fillets in the preheated oven for 15-20 minutes or until the fish is flaky and the coating is golden brown and crispy.
- While the fish is baking, prepare the tartar sauce by combining mayonnaise, chopped dill pickles, lemon juice, Dijon mustard, fresh dill or parsley, garlic powder, salt, and pepper in a small bowl.
- Serve the crispy cod fillets hot with the tartar sauce on the side.
