  • 4 large eggs room temperature
  • 1 tbsp vanilla extract 15ml
  • 1 cup brown sugar 200g
  • packed
  • 4 tbsp unsalted butter 56g
  • 0.5 cup heavy cream 120ml
  • 2 cups whole pecan halves 200g
  • roasted

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In another bowl, beat the softened cream cheese and granulated sugar until smooth. Add sour cream, eggs (one at a time), and vanilla extract, mixing until fully combined.
  4. Pour the cheesecake filling over the prepared crust, smoothing the top. Bake in the preheated oven for 30 minutes, or until the center is set but slightly jiggly.
  5. While the cheesecake is baking, prepare the pecan topping. In a saucepan, melt brown sugar, butter, and heavy cream over medium heat, stirring until combined.
  6. Remove the cheesecake from the oven and immediately pour the pecan topping over it, spreading the pecan halves evenly.
  7. Return to the oven for an additional 10 minutes. Allow to cool to room temperature before refrigerating for at least 4 hours or overnight.
